Fluffy Fruit Salad

Description

A great summer salad. Yields 12-16 servings.

Ingredients

  • 2 cans crushed pineapple, 20 Oz cans
  • ⅔ Cup sugar
  • 2 Tbsp all purpose flour
  • 2 eggs, lightly beaten
  • ¼ Cup orange juice
  • 3 Tbsp lemon juice
  • 1 Tbps vegetable oil
  • 2 cans fruit cocktail, drained, 17 Oz cans
  • 2 cans mandarin oranges, drained, 11 Oz cans
  • 2 bananas, sliced
  • 1 Cup heavy cream, whipped

Directions

  1. Drain the pineapple, reserving 1 cup of the juice in a small saucepan. Set the pineapple aside
  2. Add sugar, flour, eggs, orange juice, lemon juice, and oil to the saucepan
  3. Bring to a boil, stirring constantly. Boil for 1 minute, then remove from heat and allow to cool
  4. Combine pineapple, fruit cocktail, oranges, and banana in a salad bowl
  5. Fold in the whipped cream and cooled sauce
  6. Chill for several hours and serve cool
