Boerenkool
Description
Like saurkraut, but green, less sour, and Dutch.Ingredients
- 1 Lb kale, shredded fine
- 2 Lb potatoes, peeled and cubed
- 1 Tbsp oatmeal
- 1 Tbsp salt
Directions
- Bring kale to a boil in a pot of water
- Add potatoes, oatmeal, and salt
- Cook until potatoes are done, drain, reserving some of the liquid
- Mash the potatoes and kale together, adding back some of the reserved liquid to get the desired consistency, which is moist but not runny
Notes
- Serve with meatballs & gravy or mettwurst & gravy
- Vinegar sprinkled on the finished product brightens the flavour immensely
- The oatmeal takes away some of the bitterness natural to the kale
