Description

Like saurkraut, but green, less sour, and Dutch.

Ingredients

  • 1 Lb kale, shredded fine
  • 2 Lb potatoes, peeled and cubed
  • 1 Tbsp oatmeal
  • 1 Tbsp salt

Directions

  1. Bring kale to a boil in a pot of water
  2. Add potatoes, oatmeal, and salt
  3. Cook until potatoes are done, drain, reserving some of the liquid
  4. Mash the potatoes and kale together, adding back some of the reserved liquid to get the desired consistency, which is moist but not runny

Notes

  • Serve with meatballs & gravy or mettwurst & gravy
  • Vinegar sprinkled on the finished product brightens the flavour immensely
  • The oatmeal takes away some of the bitterness natural to the kale
