Corned Beef Salad (Slaatje)

Description

A terrific, savoury summer salad.

Ingredients

  • 3 to 4 Cups potatoes, cooked and mashed
  • 1 can corned beef
  • 1 stalks celery, diced
  • ½ cucumber, diced
  • 2 pickles, diced
  • 1 to 2 Tbsp pickle juice
  • ½ Cup pickled onions, diced
  • Mayonnaise
  • Salt and pepper, to taste
  • 4 hard-boiled eggs, diced
  • 2 hard-boiled eggs, sliced

Directions

  1. Combine all diced ingredients, pickle juice, mashed potatoes, and corned beef in a large salad bowl
  2. Add mayonaise till a moist consistency is reached (about ¾ Cup), adjusting for the dryness of the potatoes
  3. Spread on a serving dish and garnish with the sliced eggs

Notes

  1. Serve on a plate lined with lettuce and garnish with sliced pickle for added flair.
