Corned Beef Salad (Slaatje)
Description
A terrific, savoury summer salad.Ingredients
- 3 to 4 Cups potatoes, cooked and mashed
- 1 can corned beef
- 1 stalks celery, diced
- ½ cucumber, diced
- 2 pickles, diced
- 1 to 2 Tbsp pickle juice
- ½ Cup pickled onions, diced
- Mayonnaise
- Salt and pepper, to taste
- 4 hard-boiled eggs, diced
- 2 hard-boiled eggs, sliced
Directions
- Combine all diced ingredients, pickle juice, mashed potatoes, and corned beef in a large salad bowl
- Add mayonaise till a moist consistency is reached (about ¾ Cup), adjusting for the dryness of the potatoes
- Spread on a serving dish and garnish with the sliced eggs
Notes
- Serve on a plate lined with lettuce and garnish with sliced pickle for added flair.
